Beef Fajitas

  • 12 Guerrero® Flour Tortillas Riquísimas
  • 1.5 pounds of grilled beef skirt steak, (strips)
  • 4 tablespoons vegetable oil
  • 1 white onion, cut into ¼” strips
  • 1 red bell pepper, cut into ¼” strips
  • 2 poblano peppers, cut into ¼” strips
  • 1 cup of pico de gallo
  • ½ cup of guacamole
  • Season and grill beef skirt steak first and keep it warm.
  • Preheat the vegetable oil in a large nonstick skillet over medium-high heat.
  • Once the skillet is hot, add the onions, red pepper and poblano peppers and cook until soft. Add the grilled steak and heat through. Season with salt and pepper.
  • On a hot comal or skillet, warm the flour tortillas, keep warm.
  • Serve the steak fajitas with the warm tortillas and garnish with the guacamole and pico de gallo.
