Grilled Beef Kebabs

  • 12 Guerrero® Yellow Corn Tortillas
  • 1 ½ pounds of beef flank steak, cut into 1” cubes
  • 2 poblano peppers, roasted, peeled, and cut into 1” strips
  • 1 onion, cut into 1” cubes
  • 4 slices of bacon, lightly cooked (soft)
  • 12 bamboo skewers, soaked in water for at least 30 minutes
  • Salt and pepper to taste
  • Pre-heat a grill or cast iron skillet over high heat.
  • Cover steak cubes with a plastic bag and pound lightly with a mallet to tenderize.
  • Season with salt and pepper.
  • Skewer the steak cubes one inch from the end of the skewer then add one piece of bacon, one piece of poblano and one piece onion, alternating until you fill the skewer. Repeat with each skewer.
  • Spray or rub each skewer with oil. Grill or sauté each kebab 4 minutes on each side, then remove from the grill and let rest for 5-7 minutes.
  • Serve with corn tortillas and your favorite salsa.
