Grilled Steak Tacos

  • 24 Guerrero® Corn Tortillas Taqueras
  • 2 pounds of beef knuckle or very thinly sliced beef sirloin
  • 3 tablespoons of vegetable oil
  • 1 onion, thinly sliced
  • 1 jalapeño pepper, sliced thin, lengthwise
  • 1 cup of guacamole
  • 6 grilled spring onions (optional)
  • Salt and pepper
  • Pre-heat a grilling iron skillet over medium high heat.
  • Cut the beef into ½ inch strips, season with salt and pepper, and coat well with 2 tablespoons of vegetable oil.
  • Add the remaining tablespoon of vegetable oil to the hot skillet and grill the onions and jalapeños. Cook them until they are soft.
  • Add the meat in the skillet and cook through.
  • Over a hot comal or skillet, warm the tortillas and wrap them in a a kitchen towel to keep them warm.
  • Serve the grilled meat and vegetables with the guacamole and warm tortillas. Enjoy!
