Huevos Rancheros

  • 12 Guerrero® Yellow Corn Tortillas
  • 12 eggs
  • 2 cups of vegetable oil
  • 1 ½ cups of Salsa ranchera, warmed
  • 1 cup of refried black beans, warmed
  • ¼ queso fresco
  • Cilantro
  • Salt
  • Heat the vegetable oil in a skillet and fry two tortillas just long enough to make them soft, and then set them on a plate lined with paper-towels to absorb excess oil.
  • In the same skillet, fry 2 eggs at a time, and season with salt.
  • Set two soft tortillas on a plate and spread warm beans on each. Then place one fried egg on top of each tortilla with beans.
  • Last, put some salsa ranchera on top of each egg, sprinkle with queso fresco and cilantro and serve immediately.
