Marinated Pork Skewers

  • 10 Guerrero® Caseras Flour Tortillas
  • 2 ounces of chile ancho pepper
  • 1/2 cup of white vinegar
  • 2 garlic cloves
  • 1/4 of an onion, finely chopped
  • 1 pound pork, cut into 1” cubes
  • 1 cup of pineapples, chopped
  • 1 red pepper, chopped
  • 4 spring onions
  • 1/4 cup of olive oil
  • 2 tablespoons of salt
  • 1/2 cup of jalapeño pepper, sliced
  • 12 bamboo skewers, soaked in water for at least 30 minutes
  • Pre-heat a grill or cast iron skillet over high heat.
  • Sauté the chile ancho pepper, garlic and onion. After, remove and grind them with the white vinegar, olive oil and salt.
  • Once you finish making the chile ancho adobo, use some to marinate the cut pork meat for 20 minutes.
  • Once marinated, place the meat one inch from the end of the skewer and add pineapple, red pepper, spring onion and jalapeño peppers, alternating ingredients. Repeat with each skewer.
  • Spray or rub each skewer with oil. Now place them on the grill. Grill or sauté each until the meat is completely cooked.
  • Serve with warm Guerrero® Caseras Flour Tortillas and enjoy.
